Recipe: Chocolate Chip Pumpkin Cookies

Here’s a yummy Christmas cookie for all to try! (You might want to just double this recipe since it doesn’t make much.)

  • 1 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon (I pretty much tripled this—we love cinnamon!)
  • 1/8 tsp salt
  • 1/4 cup butter (I just went ahead and melted it all.)
  • 1/2 cup sugar
  • 1/2 cup canned pumpkin puree
  • 1/2 tbsp finely grated orange zest
  • 1/2 cup semisweet chocolate chips

Preheat the oven to 375.

Mix the top five dry ingredients.  Then add the butter.  Once the consistency resembles crumbs, mx in the sugar, pumpkin, and orange zest.  Add the chocolate chips.  Drop spoonfuls 2 inches apart and bake for 8-10 minutes.  Cool and serve.  Or store away with the other Christmas cookies.  Yummers!!
